Salines of Cervia


The Salines of Cervia are a nature oasis of 827 hectares, that has been preserved maintaining its fauna and flora typical of humid environments, this is not possible to admire in any other natural setting.
The Salines of Cervia, near being one of the leading elements of economy, have always offered a landscaping and naturalistic patrimony of highest value.
   The historical importance of Cervia is tied to its "white gold" and is documented by several testimonies.
   The Salines of Cervia have been instituted as a Natural Reserve of Animal population by a Ministerial Decree Law in 1979.
The Salt Museum of Cervia occupies a wing of the old salt warehouse, and illustrates the history of Cervia and the path of the salt, with the help of films, panels, plastics.
   All this is integrated by the "burchiella" and by the tools traditionally used for the extraction and the working.

Products  

SALT OF CERVIA: Our salt, medium coarse, washed in the traditional way with water high of a concentration of salt to maintain the natural minerals of the salt.

SALFIORE OF ROMAGNA: Medium fine salt called in this way because it was the best of the production of Cervia, traditionally it was delivered to the papal canteen

RESERVOIR CAMILLONE: Coarse salt, produced in small amounts, the only example of handcraft production of multiple picking up. In the 2004 the quality of this product has been recognized as a "Slow cost" presidium.

SALT WITH AROMATIC GRASS: Produced with 2 different mixtures and dosages of herbs mixed to be used in a better way for cooking and as a condiment of fish (with chives, thymus, garlic and chilli pepper) and of meat (with sage, rosemary, garlic, juniper, bay and pepper). Among the typical products also the following ones stand out: the chocolate with salt of Cervia, the wines produced on the local sand grapes, the honey of the pinewood rich of minerals with high digestive and balsamic characteristics, the plum liquor, the wild plum jam and the bathing salts.
